About this dish
Almond of local varieties grown without irrigation across the Pla and the migjorn. Small kernel, highly aromatic and rich in oil. It underpins the whole of Mallorcan baking: gató, torró, garapinyada and llet d'ametla. The February blossom is a landscape event in its own right.
